With how much they're loving "le petit Hughie", having Jack Quaid in a Star Trek show made by one of the guys who did Rick and Morty would be an fun watch. Or if they want more 'regular' Star Trek, Strange New Worlds would be a good, modern jumping on point for them.

Them watching any of the new Treks would be redundant like lower decks there are to many references to past treks that they would not get a TNG reaction a non scripted reaction would be best

For them watch strange new worlds first have to watch first two seasons of discovery especially season 2 then they will have watch the rest discovery to finish it then start strange new worlds, i would like them react to new star trek stuff but it might not do well
