Them staying to fight would be way to risky because if Aang gets captured at the fire nation capital, then that is game over, but because Aang escaped then they have another chance win, plus you forget Aang still needs to learn fire bending, so it wouldn’t make sense to beat Ozai with Aang only knowing 3 out of the 4 elements.
Assuming Ozai is even close to or maybe even better than Iroh considering they probably had similar training staying and fighting him even with Sokka and Toph probably would not go well.
Staying to fight, at that point, is too risky. If Aang gets captured at the Fire Nation capital, it’s over for everyone. And given the situation, the chances of that happening are way too big. They can’t risk losing the world’s best chance of stopping the Fire Nation. But with Aang escaping, there is still hope they can win some other day.
