My advice watch season 2 and then read the manga to where it ends in season 2. You'll understand more before going to season 3.

People didn't like season one because it left out a lot of important things that should have been included. When season 3 arrived, it was confusing because of what wasn't shown in season 2. However, it's not bad on the first watch. There's still a lot of action and big moments, but compared to the manga, season 2 didn't hold up well.

I love the eternal question of "what the fuck went wrong with season 2" because... I mean it's hard to even tell how they missed this hard? I mean going into it blind you will like it I think, it's just that the Manga goes harder so reading it first makes watching s2 less enjoyable bc you know all the missed potential.

i personally didn't hate s1 of Tokyo Ghoul. I wasn't a big fan of it, bc the rushing of so much plot was kind of detrimental to the development of so many characters, as well as future events. The censorship was also another slight against the anime, considering what Tokyo Ghoul is about, it's honestly wild to me how much they cut and toned down.
The "sequel", Root A, completely diverts from the manga, which was. a weird choice? considering the manga was finished by that point? But I believe the TG creator wanted to tell a "what if?" scenario, which. honestly I feel was such a bad idea. Characters were scrapped, full development was erased. The best part of Tokyo Ghoul was sadly Kaneki's torture (which was nearly fully changed/reduced in the anime) and everything that followed. It isn't necessarily a bad season, it's just not my thing, save for one or two episodes.
I cannot give my opinion on the Tokyo Ghoul:re anime, as I have not seen it. I've heard conflicting word on if it is loyal to Root A's story, or if it is straight up just TG:re, which would mean things that happen in Root A would just confuse you further.
Genuinely, it is yalls decision to continue or not. It'd still be fun to watch, and I'd love to see yall react to it!
I just wish Tokyo Ghoul would get the Brotherhood treatment... I need a loyal TG adaptation...

To put it into perspective: In the anime, Kaneki's Torture was specifically reduced to maybe like. One day. The implication being it starts almost immediately after Kaneki's Kidnapping up until the battle with the CCG.
In the manga, Kaneki is kept prisoner in Aogiri for a few days, THEN gets taken by Jason to be tortured roughly 10 days before the CCG's attack.

Incredibly fun to see you guys watch the first season, such an incredibly good series and one of the biggest gems from the 2010s, came out while i was in highschool and it and the op unravel were the talked about all the time

season 2 isnt bad its just that they changed a lot of details and cut a lot of important details out on top of censoring tons of details. They straight up changed canon details through censorship because certain things were so brutal. I just consider it separate from the manga instead of an adaptation tbh. I liked it as its own separate thing. I definitely would like to see you do the whole series though regardless of the hate season 2 gets.

apparently its possible for your hair to turn white after a big trauma it called Marie Antoinette syndrome your hair can change overnight because Antoinette was gona die by Guillotine and from her stress her hair turned white overnight

Re is generally very very abridged which makes its narrative extremely hard to follow as the season went on but yeah s2 is a very different story from the events of the manga but still quite good in its own right

Don't listen to everyone telling you not to continue. Yeah the anime isn't as good as the manga and it gets confusing at points, but it's still pretty good! Plus, while seasons 3 and 4 cut out a lot, it reveals SO MUCH cool information! I would absolutely recommend reading the manga to get you filled in on some parts, but the season 2 ending is pretty similar to the manga's mid-point and seasons 3 and 4 have the same plot so y'know at least it reconverges lol. My point is, if you like it, please continue!! I'd love for you guys to see what happens to my favourite characters!

So too answer the question about kanekis hair change, in the manga what triggers the change is that By repeatedly cutting off and breaking Kaneki's limbs, Yamori had inadvertently strengthened Kaneki's kagune to far surpass his own.
The torture resulted in overtime Kaneki's hair started changing from black to white because of the increase in cellular tubes in his RC cells in his kakuho, thus increasing his own RC cell count.
Also I would not Recommend continuing cuz season 2 differs HEAVILY from the manga to the point it feels like fanfiction.

In the manga Kaneki's hair was a gradual whitening throughout the torture. It's actually a real condition for hair to turn white due to intense stress. While the RC cells might've have hastened the process, it was undoubtably the insane amounts of stress he was under that changed his hair.
