Mummy 2 is just as fantastic as the first one. Now the 3rd one is not as good mostly due to a recast and really bad cgi. But I do think you should do the whole trilogy cuz the reaction to the 3rd might be good just for funnzies.

I know Imhotep is the bad guy, but he is a top tier boyfriend. Like, ladies, get you a man who is willing to risk the anger of the gods to bring you back to life. Bro was eaten alive by bugs and spent a couple thousand years in some not-quite-dead state and his first thought after waking up was "gotta get my lady back".

So there is a fan theory/sort of theory about our boy Jonathan. It's not that he's incompetent, but that after serving in WWI he is disillusioned. As quoted from this site (https://deejgray.com/fannish_50-the-mummy-1999-jonathan-carnahan/):
"So let’s review what we know to be true from the film itself.
Jonathan can read Ancient Egyptian, even if it is not to the same degree
his sister can. He’s clearly interested in archaeology to the point of
being on digs himself – which would have required extensive schooling to
qualify for those kinds of permits. The “dig down in Thebes” line
alludes to that and Evie clearly believes him when he tells her where he
found it.
Jonathan also doesn’t miss when he shoots and he clearly has some
boxing experience. Given the time period of the movie, he’s the right age
to have fought in WWI (So’s Rick and the French Foreign Legion did
fight in WWI but that’s a different post) and that makes everything
about him make so much more sense.
Jonathan, much like Phryne Fisher in one of my favorite period
mystery shows, hasn’t taken anything seriously since 1918 and for pretty
much the same reasons. He’s exactly the sort of soldier who got
disillusioned from seeing what he did and since it didn’t actually kill
him, he’s jumped from that into something slightly less dangerous.
Archaeology was dangerous, not necessarily from curses, but just from
people with guns shooting at you. He’s living it up when he can and
trying not to give in to those darker impulses.
Evie: Have you no respect for the dead?
Jonathan: Of course I do, but sometimes I’d rather like to join them."
It's also why he's always drunk or trying to drink. It's post war trauma.

Absolutely should watch The Mummy Returns. The Scorpion King film series is a loose prequel, but really just the character itself is featured in the next Mummy film. The 3rd one isn't necessary, but still somewhat fun featuring mummies in China.
There's also an animated series The Mummy (2001 - 2003) that was really good. It was also loosely based on The Mummy and serves as an alternative sequel to The Mummy Returns. They had a pretty stellar cast with John Schneider as Rick O'Connell, Grey DeLisle (voiced Azula, Sam from Danny Phantom, etc.) as Evy, Tom Kenny as Jonathan, and Jim Cummings as Imotep. That would be a fun series to watch too.

I can answer your question regarding the fight scene against the mummies to save Evelyn : Brendan Fraser choreographed his movements, and all the mummies were added later via CGI. There wasn't anything there, just him flailing around.
Ardeth, the Magi, was actually supposed to die at the end of the movie, but Stephen Sommers, who directed the movie, said he was "too heroic to be killed off", so he was kept alive.
Brendan Fraser almost died during the scene where he was hanged. He actually stopped breathing and they had to resuscitate him.
The camel refusing to move when Beni tried to make it move after getting the gold out of the chamber was not entirely on purpose. For some reason, every camel in the movie hated Beni's actor, Kevin O'Connor.
You should definitely watch at least the second movie, I won't spoil anything but you can expect the cast to return. It's awesome and just as enjoyable as the first movie. I don't remember much about the third movie, only that it's not about Egypt, and they had to cast someone else for Evelyn because the original actress refused Universal's offer for the role since she had to take care of her newborn child. The third movie is also way less appreciated by the fans and considered a disappointment (though I only saw it once a long time ago, so I don't remember much from it)
