Death watch is neat in concept as they are a twist on original mando ideals of being powerful warriors and mercenaries but being evil than neutral
The Old Republic is a mmo that you can become a mando in, though it takes place like 3,656 years before a new hope its all from the legends sires of books, the extended universe stuff

Jedi Academy is the best "create your own Jedi" and even though its pretty old it holds up. Classic Battlefront 2 and EA's Battlefront 2 are both excellent, and EA's Battlefront 2 still has a good size community even though it came out 8 years ago on console, and the modding community on PC is INSANE.
Amy Hennig, the woman who directed the Uncharted games is also working on a Star Wars game so thats something to look forward to.
